How should I store my olive oil?
Store your Alaia olive oil in a cool, dark place away from direct sunlight and heat sources. Once opened, we recommend using within 6 months for optimal flavor. The oil has a shelf life of 18 months from harvest.
How fresh is your olive oil?
Our olives are pressed within 12 hours of harvest using cold-press extraction methods. This rapid processing preserves the natural antioxidants, polyphenols, and the vibrant, peppery flavor that defines our oil.
Why is your olive oil peppery?
The peppery sensation is a sign of quality and freshness. It comes from the high polyphenol content (150-350 mg) in our Koroneiki olives. These natural compounds are powerful antioxidants and contribute to the robust character of authentic extra virgin olive oil.
Can I cook with this olive oil?
Yes! Our EVOO is excellent for cooking, grilling, and sautéing. We recommend not heating above 180°C (356°F) to preserve its delicate flavor compounds. For the best taste experience, use it as a finishing oil on salads, pasta, and grilled dishes.
